Here we see a wind streak that can help us visualize why it works to go up in the lulls, down with the puffs: If it weren't for the leeward mark coming right up, we could all bear away, and be able to enjoy the puff longer by going more parallel to it rather than sailing across it and out the other side, as we are doing above.

Ideally, you don't want to hoist in one of these, not just to keep the open side up, but also because in such a gust, steering with your knees while pulling on the spi halyard leaves you unable to give full concentration to steering and sail trim can lead to big speed gains, i.e. possible planing.
